Summer 2010: Molly's Quick 'n Spicy Corn

Prep Time: 2 minutes            Cook Time: 8 minutes

Teen Iron Chef Molly Bhuiyan, a sophmore at Manhattan Center for Science & Mathematics High School in the Bronx, has been stirring up change in Brooklyn and the Bronx @Youtmarkets this summer!  Here is Molly's own delicious recipe for a summer favorite: CORN!!  This is the easiest, low-calorie but high flavor corn recipe you'll ever make!

Ingredients:

4  ears                   sweet corn, raw

1 teaspoon            sea or kosher salt

1/2  teaspoon        red pepper flakes

1/2                        fresh lime

Directions:

1. SHUCK the corn.

2. HEAT a medium skillet , grill pan or barbeque girll.

3. In a very small bowl, COMBINE salt and pepper flakes. MIX well.

4. Place the corn on the dry skillet/griddle/barbeue.  COOK until some of the kernals brown (they will pop!); keep turning with tongs to cook evenly on all sides (about 2 minutes per side).

5. When the  corn is cooked, SLICE the line into 2 quarters. DIP lime into spiced salt and press into the hot corn, two ears per slice of lime. Continue dipping each slice of lime into the salt mixture to ensure the flavor is evenly distributed on all sides.

6. Eat right away and enjoy!  Great with any summer meal!
